Vegan pumpkin spice latte
This vegan-friendly recipe for an autumn classic uses coconut milk for a smooth, creamy finish

Ingredients
- 1 Vita Coco coconut milk
- 115g Pumpkin puree
- 60ml Maple syrup
- ½tsp Pumpkin spice mix
- Espresso strength coffee (optional)
- Dairy-free whipped cream
- A sprinkle of pumpkin spice
- 2 Cinnamon sticks
Method
Step 1
Put all the ingredients into a blender and whizz together until smooth. Pour the mixture into a medium pan and heat it over a medium-high temperature until warmed through.
Step 2
Divide between two large glasses and top with whipped cream and a sprinkle of pumpkin spice. Serve with cinnamon sticks and enjoy.
