5 strawberry recipes that are perfect for sunny days
1. Strawberry tiramisu recipe
Serves 8
Ingredients
For the strawberry coulis:
- 2 x pack Del Monte Frozen British Strawberries (600g)
- The juice of 1 lemon
- 2 tbsp caster sugar
For the vanilla whipped cream:
- 600ml double cream
- 50g caster sugar
- 2 tsp vanilla extract
- 250g mascarpone
- 225g Savoiardi sponge fingers
- 400g fresh British strawberries, hulled and sliced
Method
- Add Del Monte Frozen British Strawberries to a large saucepan along with the lemon juice, caster sugar. Cover the saucepan with a lid and place over a low-medium heat for about 10 minutes and allow the strawberries to thaw and eventually begin to simmer. Lower the heat and simmer the strawberries for a further 5 minutes, or until they are soft, then remove the saucepan from the heat and set aside to cool to room temperature.
- In a large bowl, whisk the cream with the caster sugar and vanilla extract until soft peaks form, then gently fold through the mascarpone.
- When the strawberries have cooled to room temperature, blitz in a high-speed blender until you have a smooth coulis.
- Pour about 1cm of strawberry coulis into the base of a 25cm x 25cm dish, then lay the trifle sponges across the top, pushing them down into the coulis a little. Cover with more coulis and spoon over the whipped vanilla cream. Top with a layer of sliced strawberries and repeat the process once more to fill the dish.
- Cover and transfer to the fridge for at least 2 hours or, ideally, overnight for the sponge fingers to soften and soak up the coulis.
- Remove from the fridge about 20 minutes before serving

2. Strawberry daiquiri
Serves 2
Ingredients
- 1 x pack Del Monte Frozen British Strawberries (300g)
- The juice of 1 lime
- 2 tsp dark brown sugar
- 1 tsp vanilla extract
- A splash of water to help with blending
- For the vanilla whipped cream:
- 300ml ‘whippable’ coconut cream
- 1 tsp vanilla extract
- A small handful of fresh British strawberries to garnish
Method
- In a large bowl, whip the coconut cream and vanilla extract until medium-soft peaks start to form. Set aside while you make the daiquiri.
- Add Del Monte Frozen British strawberries to a blender along with lime juice, brown sugar, vanilla extract and a splash of water. Blend the mixture until smooth and combined.
- Spoon the daiquiri into the base of two short glasses or small cocktail glasses. Top with a spoonful or two of whipped vanilla cream and repeat this process, layering the two until both glasses are full. Garnish each glass with a fresh British strawberry and enjoy right away.

3. Vegan victoria sponge
Ingredients
For the cake:
- Dry ingredients
- 400g/2½ cups self-raising flour
- 275g/1 ⅜ cups golden caster sugar
- 2 tsp baking powder
- ½ tsp salt
Wet ingredients:
- 400ml/1¾ cups soya milk
- 150ml/⅔ cup neutral oil (eg rapeseed)
- 1 tbsp vanilla extract 1 tbsp cider vinegar
Butter icing:
- 100g/8 tbsp firm vegan butter, chilled
- 1 tbsp vanilla extract
- 1 tbsp plant milk (add more if necessary but only do this tiny bit by bit)
- 500g/4 cups icing sugar, sieved
Other:
- Layer of jam – use as much as you like
Optional:
- Strawberries for decoration
Method
- Preheat the oven to 180°C (fan)/350°F/Gas Mark 4.
- Grease and line 2 round cake tins (approx. 8″ diameter). In a large mixing bowl, thoroughly combine all of the dry ingredients. In a large jug, stir together all the wet ingredients and then leave for a few minutes.
- Pour the wet ingredients into the bowl of dry ingredients and stir until combined (but don’t over-stir).
- Evenly distribute the cake mixture between the two tins.
- Tap the tins on the side of the worktop (this stops the raising agents from working too quickly). Place them in the oven for 20-25 minutes or until lightly golden and a knife/skewer comes out clean.
- Leave to cool completely.
To make the butter icing:
- Using an electric hand whisk, thoroughly combine all of the ingredients until you get the desired consistency.
Assembly:
- Remove one of the sandwiches from the tin and spread half the butter icing over the top.
- Add a layer of jam on top of the butter icing then place the other half of the cake on top.
- Spread the other half of the butter icing over the top of the cake and decorate with a dusting of icing sugar and strawberries (optional).

4. Strawberry fool
Serves 4
Ingredients
- 250ml double cream
- 100g icing sugar
- 300g strawberries, diced with stalks removed 1 lemon, juiced
Method
- Firstly, blend 200g of diced strawberries, lemon juice and 50g of icing sugar, and set aside.
- In a mixing bowl, add 250ml of double cream and 50g of icing sugar and whisk until soft peaks are formed.
- Next, fold half of the strawberry puree and the remaining diced strawberries into the cream.
- Divide the mixture between the serving glasses and refrigerate for 20-30 minutes before serving.
- Top with the remaining strawberry puree and serve!

5. Strawberry shortcake
Ingredients
- 115g cake flour
- 5g baking powder
- 5g salt
- 3 eggs, separated
- 1 pinch cream of tartar
- 175g sugar
- 15g unsalted butter, softened
- 5g vanilla extract
- 125ml milk
For the topping:
- 500g strawberries
- 1 lemon
- 75g caster sugar
- 1 pinch of ground pink peppercorns
Method
- Sift and combine all the dry ingredients, then rub the butter into the flour mix.
- Whisk the egg whites and sugar together until they form medium peaks.
- Combine the egg yolks and milk with the dry ingredients.
- Separate into equal-sized balls and bake at 180ºC until golden.
For the topping:
- Quarter or roughly dice the strawberries, cover with the sugar, pepper and lemon zest and leave to sit for 15-20 minutes in the fridge.
To serve:
- Place a few of the shortcakes at the bottom of a bowl or on a large plate.
- Top with a dollop or two of whipped cream or thick yoghurt, cover with the fresh strawberries and drizzle with the strawberry syrup.
- Finish by crumbling a shortcake or two over the top.
For extra flair:
- Baste the halves of two peaches and sear in a pan with beurre noisette and a sprig of thyme on a medium heat. Serve on the side of the strawberry shortcake.
Top tip for buying strawberries
Devin Jones, head pastry chef from five-star hotel The Grand, York says: 'When buying strawberries, we are attracted to the deeper coloured fruits as they are the ripest, but it’s worth being mindful of when you plan to eat them as fully ripe strawberries are best served the same day.
"Always check the bottom of the punnet to see if the strawberries are starting to bruise as this is a sign they are beginning to be past their best.'
