Peanut butter, chickpea and chocolate vegan blondies
These gorgeous vegan blondies are just what you need to satisfy your cakey cookie cravings

Ingredients
- 1 a cup of almond Breeze Nutri+ Fibre
- 1 a cup of chickpeas drained and rinsed
- 1tsp Baking powder
- 1 a cup of peanut butter melted
- 1tsp Vanilla extract
- ½ a cup of maple syrup
- ½ a cup of Ground almonds
- ½ a cup of Cranberries
- ½ a cup of Cacao nibs or chocolate chips
Method
Step 1
Pre heat the oven to gas mark 4 and line a small baking tray with parchment paper.
Step 2
Add all the ingredients apart from the chocolate to a food processor and mix until smooth & creamy.
Step 3
Transfer the batter to a large bowl and stir in the chocolate chunks. Then into the baking tray, smooth out so that it’s even and then sprinkle with a little coconut sugar.
Step 4
Bake for 25 – 30 minutes.
Step 5
Allow to cool completely before removing from the tray and slicing. Enjoy!
