Coconut and fig energy balls
These healthy energy balls are great for long runs and a brilliant alternative to the artificial sugar gels that a lot of athletes opt for!
Makes 10-12 balls
Ingredients
- 65g Pecan nuts
- 75g Oats
- 3tbsp Shredded coconut plus more for coating
- 6 Dried figs (if possible try to buy the ones without any preservatives or sulphates)
- ½ Jazz Apple grated (skin included)
- 1tbsp Date syrup (optional)
- 1tsp Cinnamon
Method
Step 1
Place the oats and the nuts into a food processor and blitz for until a flour starts to form.
Step 2
Add all the remaining ingredients and process for another minute or so until you have a sticky dough.
Step 3
Remove the mixture from the food processor and roll them into balls of the size you prefer.
Step 4
Coat them in the shredded coconut and place them in the fridge for half an hour to firm up.
Step 5
You can store them in air tight container in the fridge for up to 2 weeks.
