10-minute creamy chorizo gnocchi with spinach

Looking for some quick dinner inspiration? This speedy gnocchi recipe has it all: spicy chorizo, a rich and creamy sauce and a sprinkling of cheese to finish it off.

Ingredients

  • 250g / 8.81oz Cherry tomatoes
  • 200g / 70z Chorizo, diced
  • 700g/ 24.7oz Gnocchi
  • Salt
  • 30g / 1oz Roasted garlic paste
  • 100g / 3.5oz Soft cheese
  • 160g / 5.6oz Baby leaf spinach
  • 70g / 2.5oz Italian hard cheese, to serve
  • Black pepper, to serve
  • Olive oil, to serve

Method

  • Step 1

    Boil a kettle. Heat a large, wide-based pan (ideally with a lid), over a medium-high heat. Chop the cherry tomatoes in half.

  • Step 2

    Add the diced chorizo to the pan and cook for 3 minutes or until it begins to crisp.

  • Step 3

    Meanwhile, add the gnocchi to a pot of boiled water with a large pinch of salt and bring to the boil over a high heat. Cook the gnocchi for 3 minutes, then drain.

  • Step 4

    Add the roasted garlic paste to the pan with the chorizo and cook for 30 seconds. Add 175ml boiled water and the soft cheese and stir.

  • Step 5

    Add the chopped tomatoes and spinach and cook, covered, for 2 minutes or until the spinach begins to wilt.

  • Step 6

    Add the gnocchi and cook for 30 seconds, until the sauce begins to stick to the gnocchi. Top with grated cheese, a drizzle of olive oil and a grind of black pepper.
