Ingredients

  • 450g/15.8oz bavette steak (or skirt steak)
  • 2 tbsp taco seasoning
  • 1 tbsp olive oil
  • 1 hoagie rolls or long crusty rolls
  • 60g/2.1oz mayonnaise
  • 1 can of refried beans
  • 1 large avocado sliced
  • 1 large tomato sliced
  • ½ large red onion sliced
  • 10 Opies mini gherkins sliced
  • 10 Opies mini silverskin onions sliced
  • 120g/4.2oz Cheddar cheese grated

Method

  • Step 1

Rub the taco seasoning into the steak so that it is well-coated. Leave aside for 5 minutes to marinate.

  • Step 2

Add the olive oil to a non-stick pan and cook the steak for around 5-6 minutes, turning halfway through.

Alternatively, place the meat on a medium-hot barbecue until slightly charred but cooked to your liking.

Remove from the heat and let the steak rest for 10 minutes. Once rested, cut into thick slices.

  • Step 3

Halve the rolls and spread a generous layer of mayonnaise on one side.

Spread the other side with a layer of refried beans, then add slices of avocado, tomato and red onion.

Spoon over the pickles, then top with slices of cooked steak. Sprinkle with grated cheese.

  • Step 4

Place the lids on the rolls then use a sharp knife to cut in half and serve immediately.
